Restaurant Vivant offers vegetarian and vegan cuisine, mostly Asian but not exclusively! Kimchi, tempeh and other fermented foods made on site with local ingredients.
What makes the distinctive flavors of Asian cuisine? It's the transformation of ingredients through natural fermentation techniques. At Vivant, we use only vegetable matter (fruits, vegetables, legumes, cereals, seaweed, spices) to produce enzymatic syrups (koso, choeng), lacto-fermented fruits and vegetables (including kimchi, preserved lemons, apricot-boshi, ogorki kiszone...), and tempeh and koji. We respect traditional techniques, using local ingredients: most of our ingredients come from around Grenoble and elsewhere in France. They come from organic and sustainable agriculture.
On our menu, you'll find traditional dishes (for example, Korean, Japanese, Cantonese, Indonesian...) as well as dishes inspired by our team's travels!
